How long do you cook stew with red wine?

When cooking stew using red wine, it is very important to remember not to allow the wine to reach boiling point. This will indeed release the combined juices from the meat and dry it out, leaving you with a dry piece of chewy meat in your mouth.

The average cooking time depends on the amount of stew you're preparing. If your preparing a meal for two and covering your ingredients with the red wine after gently frying them, you should expect to cook the stew on a low to medium heat for up to 1 1/2 hours. An additional 30 minutes should be added onto the cooking time for each additional 2 portions prepared.

An additional tip for perfect stews, would be to use a medium crisp red wine, which will compliment the combination of the fresh vegetables and meat. Redwines are also good for for big beef meat pots recipes. Some even use redgrape wine for chicken and lamb, even though it's nothing I'm too found of.
