Manieschevitz Elderberry Wine is made with the following ingredients:
- Red or Green Elderberries
- Water
- Sugar
- Lemon juice and the rind
- Campden tablets
- Pectic enzyme
- Yeast nutrients
- Wine yeast
- Raisins
Steps to carry out:
- Wash the berries, the lemon and rinse the raisins.
- Remove any stalks or hard pieces from the berries and raisins.
- Crush the berries with the raisins and place them in a primary fermenter
- Dissolve the tablets in hot water
- Add the primary fermentor
- Stir in the lemon juice
- Stir in the pectic enzyme
- Place all of the above ingredients in a container together and place in a dark location overnight.
- The next day, add about a gallon of hot water to the mixture
- Add the yeast
- Mix all ingredients together and place again in the dark spot for three days
- On the fourth day, strain the mixture to remove all husky ingredients.
- Add the sugar and nutrients
- Place the juice in another fermentor and seal to airlock.
