The fermentation will slow down after this is done and the yeast becomes less active. After the yeast is less active it no longer poses a threat to pick up dangerous contaminations or germs from outside. This why the air lock is needed but you want to make sure you don't rack too many times because this will cause the wine to lose it's flavor and make it taste unpleasant.
Many people that do wine racking end up causing a disaster because they misuse the term for wine racking and they think it means to keep the wine bottled which causes wine to lose it's fermentation. When wine first racking is done it simply means place the wine from one container to the next leaving all contaminations behind.
